Celebrate Mum with These Easy Mother’s Day Recipes

This Mother’s Day, show your love the delicious way. Whether you’re planning breakfast in bed or a sweet afternoon treat, these easy recipes are the perfect way to make Mum feel extra special.

BREAKFAST

Berry Bliss Pancakes  🍓

A fluffy, feel-good start to Mum’s day.

You’ll need:

  • 1 cup self-raising flour
  • 1 tbsp sugar
  • 1 egg
  • ¾ cup milk
  • 1 tsp vanilla extract
  • Fresh berries (strawberries, blueberries, raspberries)
  • Maple syrup & whipped cream to serve

Method:
Whisk flour and sugar together. In a separate bowl, combine egg, milk and vanilla, then fold into dry ingredients. Cook pancakes in a buttered pan over medium heat until golden. Stack them up, top with berries, a dollop of cream and a drizzle of maple syrup

 

DESSERT

Pav-Misu  ☕🍰

All the coffee-kick of a tiramisu with the cloud-like lightness of a pavlova. Recipe courtesy of Woolworths .

You’ll need:

  • 600mL Woolworths thickened cream
  • 500g Woolworths mascarpone
  • 1/4 cup icing sugar
  • 1 cup espresso coffee, cooled
  • 24 savoiardi biscuits
  • 80grams Woolworths meringue nests
  • 125grams strawberries, halved
  • 1 tbs cocoa powder

Method:
Using an electric mixer, beat cream, mascarpone and icing sugar in a large bowl until soft peaks form. 
Place coffee in a shallow bowl. Working with 1 biscuit at a time, dip 8 biscuits into coffee, then arrange over base of a 3L rectangular dish (20x30cm base). Top with one-third of the cream mixture, then crumble over 2 meringues. Repeat layers, finishing with cream. Reserve remaining 4 meringues.
Refrigerate, covered, for 4 hours or overnight, or until layers soften.
Break remaining meringues and arrange over top of cream. Top with strawberries. Serve dusted with cocoa powder.

 

DRINK

Strawberry Sparkle Mocktail 🥂

A refreshing sip with a little sparkle.

You’ll need:

  • 1 cup fresh strawberries, blended
  • 1 tbsp honey or sugar (optional)
  • Sparkling water or lemonade
  • Ice & mint leaves

Method:
Add strawberry purée and sweetener (if using) to a glass. Fill with ice, top with sparkling water or lemonade, and stir gently. Garnish with mint and a fresh strawberry.
