These golden, honey-glazed croissants, topped with fresh raspberries and fragrant thyme, make a sweet and romantic treat—perfect for surprising your Valentine or adding a touch of love to breakfast or dessert in bed.

Prep Tip:
No piping bag? Simply use a resealable storage bag and snip off a corner to pipe the ricotta mixture—heart-shaped designs make a charming finishing touch!


Ingredients
  • 4 Woolworths all-butter croissants

  • 50g unsalted butter, melted

  • 1/4 cup honey

  • 188g Woolworths smooth ricotta

  • 2 tablespoons caster sugar

  • 63g raspberries, halved

  • 2 sprigs thyme, leaves picked

    Preheat the oven to 200°C (180°C fan-forced). Line a large baking tray with baking paper.

    Using a rolling pin, gently flatten the croissants. Arrange on the prepared tray, brush with the melted butter and drizzle with 2 tablespoons of the honey. Cover with a sheet of baking paper and place a heavy baking tray on top to weigh them down. Bake for 10 minutes or until golden and crisp. Remove the top tray and baking paper, then set croissants aside to cool.

    Meanwhile, blitz the ricotta and caster sugar until smooth. Transfer to a piping bag fitted with a 1 cm round nozzle. Pipe the ricotta mixture over the croissants, then top with raspberries and thyme. Drizzle with the remaining honey and serve.
